


'sake'
Japanese rice wine. Rice starch is degraded to fermentable sugars by Aspergillus oryzae in a steamed rice KOJI; this is inoculated with ‘Saccharomyces sake’, a strain of S. cerevisiae with a high alcohol tolerance. A succession of organisms follows A. oryzae: nitrate-reducing bacteria, followed by lactic acid bacteria, followed by yeasts—‘S. sake’ finally becoming dominant. The alcohol content reaches 20% or higher.
